Wake ’Em Up Pancakes

 

Makes about 8 four-inch pancakes.

 

WHAT TO GET

 

2 tablespoons butter

2 cups flour

2 teaspoons baking powder

1/4 teaspoon salt

1 tablespoon sugar

2 large eggs

1-1/2 cups milk

8 strips bacon

1/2 cup brown sugar

1/2 cup chopped pecans

 

vegetable oil or peanut oil for frying

 

Preheat oven to 425 degrees F.

 

PANCAKE BATTER

Melt butter and let cool. Combine flour, baking powder, salt and sugar in large bowl. Lightly beat eggs in small bowl. Add milk and cooled melted butter to eggs. Stir egg mixture into flour mixture until just blended. Don’t worry if there are a few lumps. Let batter rest at room temperature while you make the Praline Bacon Crumbles.

 

PRALINE BACON CRUMBLES

Line a roasting pan with aluminum foil. Arrange bacon slices in one layer and bake about 10 minutes, until they begin to crisp. Remove bacon from oven and sprinkle with brown sugar and pecans. Return roasting pan to oven and cook until bacon is crisp, about 5 minutes. Transfer praline bacon to paper towels to drain. Break each strip into 5 pieces. Stir Praline Bacon Crumbles (and the nuts and sugar left in the pan) into pancake batter.

 

Heat pan over medium-low heat. Lightly grease pan with vegetable oil or peanut oil. Use about 1/4 cup batter for each pancake. Cook pancakes until bubbles appear on top. Turn and cook until golden brown.
